2 (1-oz) squares unsweetened chocolate
1/2 cup butter
2 eggs
1 tsp. vanilla extract
3/4 cup sugar
1 cup all-purpose flour
Combine chocolate and butter in top of a double boiler. Bring water to a boil; reduce heat to low, and cook until chocolate and butter melt, stirring occasionally. (Hey! Make it easy on yourself! Nuke it!) Set aside. Combine eggs, sugar, and vanilla in a medium mixing bowl; beat at medium until blended. Add flour and reserved chocolate mixture. Mix well. Preheat waffle iron. Crop dough by 2 teaspoons full onto iron. Close iron and bake for 1 to 1 1/2 minutes or until done. Let cool on wire rack. Top with frosting or powdered sugar. Makes 2 1/2 dozen.
